Cedar Planked Salmon
Ingredients:
(2) 6 oz portions of New Zealand King Salmon*
1 large Cedar grilling plank*
Lemon wheels
Dill Sprigs
Salt and pepper

Instructions:
Soak cedar plank in water for one hour.
Set-up grill for Med-High indirect heat. Preheat.
Season salmon with salt and pepper, or other seasoning of your choice.
Place the plank on the grill for 3-4 minutes until there is a smell of smoke.
Flip the plank and place the salmon on top, skin side down.
Cover the grill and cook for approximately 10-20 minutes, depending on the thickness of your salmon.
Top with dill and lemon for the last 10 minutes of cooking.
If the edges of the plank catch fire, just mist with water in a spray bottle or move the plank to a cooler part of the grill.
Internal temperature should read 125°F for medium.
Transfer plank to platter and serve.
